Michelangelo Paparusso

I was born in 1989 in Milan and have Apulian roots, shaped by the authentic flavours and traditions of southern Italy.

My professional journey did not begin in the kitchen. After graduating as a surveyor and studying architecture, I first worked in a world of lines, shapes and projects. But my true passion eventually led me somewhere else: to the kitchen.

There my new path began – shaped by dedication, discipline and a constant desire to learn. I had the privilege of working in renowned five-star luxury hotels, Michelin-starred restaurants in Italy, and various high-end gastronomic establishments. These experiences defined my culinary signature and formed my vision of cooking.

My cuisine is a journey through the traditions of the Italian regions, which I reinterpret with a modern eye. Classic dishes are developed through contemporary techniques and refined international influences – a natural result of my experiences abroad.

I have lived in Switzerland for fourteen years, and Lucerne has long since become more than just a place: it is my home.

My dishes tell exactly this story – an encounter between tradition and innovation, between Italy and the world.

My name is Spiros Platnaris and I work as Restaurant Manager at our Italian restaurant Cara Mia here in Lucerne. Originally I come from Greece, a country with an equally strong culinary tradition to Italy.

I have been working in gastronomy for over 20 years and have gained extensive experience in various areas of restaurant culture – from service and guest care to the management of high-quality hospitality businesses.

Hospitality is not just a profession for me, it is a passion. My goal is to offer our guests an authentic culinary experience where quality, atmosphere and personal service are at the centre.

Mediterranean culture has strongly shaped me – both Greek and Italian cuisine stand for pleasure, freshness and the shared experience at the table. This is exactly the feeling we want to convey to our guests every day.
